My recipe and making of Vegetable Biriyani





In this post, I will be blogging on my experience of cooking Vegetable Biriyani.
 I will be sharing the recipe as well.

This was the first occasion that I had made biriyani. I was elated and excited.
I was jocular as I started cooking and as I was sprinkling the spices, I was hooked by the mesmerizing smell. Soon my joy was taken over by painful groans of my sore arm due to the constant stirring. This kept me wondering about our mothers, who do work like this everyday. Determined, I dogged on with a persevering mindset of not giving up.


At last, I peeked into the dish. I was flabbergasted. The golden brown colour of the Biriyani rice, the aroma of the spices and the correct amount of vegetables, made it tantalizing and alluring. As I started eating the biriyani, I found it very appetizing due to the perfect mixture of the ingredients and the perfectly cooked rice.

The recipe is given below :
  1. Onion sliced - 4 medium sized onions
  2. Onion sliced ( for oil frying) - 1 big onion - deep fry and keep aside
  3. Tomato chopped - 4 medium sized tomatoes
  4. Ginger garlic paste - 1 tablespoon
  5. Green Chilies chopped - 4
  6. Coriander leaves chopped - 1/2 cup
  7. Coconut Milk - 1 cup
  8. Lemon Juice -from 1 lemon
  9. Basmati Rice - 3 cups ( soak for 15 minutes)
  10. Water - 7 cups
  11. Ghee - 4 tablespoon
  12. Salt - to taste
For Seasoning :

  1. Fennel - 1 tablespoon
  2. Cloves - 3
  3. Cinnamon - 1 small stick
  4. Black Pepper - 4
  5. Bay leaves  - 1 leaf
  6. Star Anise - 1 piece 
  7. Cardamom - 3 pods
  8. Mace - 1 piece
  9. Cashew nut - 5
  10. Curry Leaves - 1 sprig
Masalas :
  1. Turmeric Powder - 1/2 teaspoon
  2. Red Chili Powder - 1/4 teaspoon
  3. Chicken Masala - 2 tablespoon
Directions :
  • Take a big pressure cooker
  • Put ghee in it and switch on the flame
  • Add all the ingredients mentioned under the Seasoning heading and and saute it for one minute till you get a nice aroma
  • Add the sliced onions and saute it till it gets a slight brownish in colour.
  • Now add the ginger garlic paste and saute it till the raw smell goes.
  • Add the"masalas"mentioned under the masalas heading and stir it till the raw smell goes.
  • Add the chopped tomatoes and green chilies. Stir till every ingredient is evenly mixed.
  • Now add the Basmati rice.Mix it well and add water.
  • Add coconut milk and lemon juice.Mix all the ingredients well.
  • Now close the pressure cooker and cook it till you hear one whistle.
  • Once the pressure is released, add the deep fried onions and the coriander leaves
  • Mix everything well.
  • Serve it in a serving plate.
This is a wonderful recipe for making a very yummy biriyani.
